We at SAGE understand our responsibility for the stewardship of the earth's resources. We founded our company on the principles of quality, integrity and service, values that apply to every aspect of our organization.

Our Commitment to Sustainability begins with our choice of vendors, selection of products and design of the dining program. It continues with a conscientious effort to minimize waste and implement environmentally responsible business practices.

Focus on Food

  • We work closely with local merchants, state farm bureaus and other community resources to feature fresh, regional products. Our goal is to purchase as much local product as possible, safely and within budget.
  • We use fresh, ground beef that contains no lean, finely textured beef (LFTB).
  • SAGE supports the humane treatment of animals. We purchase only shell eggs that are cage-free and Certified Humane for use in our kitchens.
  • Our milk is 100 percent antibiotic-free and hormone-free.
  • SAGE supports the Monterey Bay Aquarium Seafood Watch guidelines, and we strive to increase our purchases of sustainable seafood.
  • Our tuna is dolphin-safe, packed in water.
  • Wherever possible, we grow fresh herb and vegetable gardens and incorporate the produce into our menus.
  • SAGE buys local and organic products, wherever possible. Organic food is produced with only organic pesticides and fertilizers, is not genetically modified, and prohibits the use of antibiotics or hormones. Learn more about our vendors.

Dining Program

  • Menus are custom designed for each community, and they change seasonally, to reflect the fresh product available in each local market.
  • Our talented chefs prepare our food fresh, from scratch, at every location. We believe freshly made food tastes better, retains more nutrients and is safer for the environment.
  • We strive to increase our use of minimally processed and raw foods.
  • SAGE encourages trayless dining to promote water and energy conservation, discourage overeating and reduce food waste.

Waste Reduction

  • We partner with participating clients to compost organic waste into usable gardening materials.
  • We encourage the use of china, glassware and silverware and discourage the use of disposable service ware. Disposable service ware we do use is biodegradable, as are our trash bags.
  • Many of our clients have switched from bottled water to filtered water dispensers.
  • We recycle cardboard, glass, plastic and metal where possible.
  • We recycle used cooking oil into biodiesel fuel.

Sustainable Business Practices

  • SAGE uses 100% wind energy to power our offices.
  • Replacement appliances are Energy Star-rated.
  • We print on recycled paper, using recycled printer cartridges.
