The Makings of a SAGE Menu

SAGE has been promoting scratch cooking and focusing on variety since the beginning. We understand a positive mealtime experience can impact students and their academics, attendance, athletic or extracurricular activities, and overall well-being. That’s why we put such care into making sure every menu provides a variety of options to properly fuel our communities and accommodate all palates and eating patterns.

The foundation of a SAGE menu is our scratch-made recipes. Each SAGE recipe is written by one of our Chefs, then goes through a careful review process to ensure culinary standards and community satisfaction. Our Registered Dietitians analyze recipes for nutritional information as well as check ingredients and tag menu items that contain any of the 12 most common allergens.

Your SAGE Manager creates unique menus by choosing specific dishes based on the needs and preferences of your community. They submit their menus to our Dietitians, who examine each one to ensure all standards are met, including nutritional balance and allergy accommodations. Through this process, we confirm each menu offers plenty of variety, such as vegetarian and vegan selections and allergy-friendly options.

We aim for our menus to delight the senses, inspire minds, and foster community. In our dining halls, you’ll find:

  • Great variety — there’s something delicious for everyone!
  • Scratch-made recipes.
  • Locally sourced and campus-grown ingredients, where possible.
  • Diverse station concepts, like Paquito’s®, Pacific Thyme, Vegitas®, Mangia! Mangia!, and Crossroads.
  • Fresh ingredients, including:
    • Fruits and vegetables.
    • Whole-grain breads, bagels, and rolls.
    • House-roasted deli meats.
    • House-made salad dressings.

We invest our time and resources into the menu review process because we know a balanced menu — created with the community’s needs and wants in mind — is at the center of an inclusive food program. Our goal is for community members to look forward to each meal as a chance to relax, build relationships, and enjoy the dining experience.

We always welcome community feedback — in person, on comment cards, and through our Touch of SAGE® app. Your input helps us make great menus even better!
