Your pancakes don't have to be boring. Pair these sweet potato pancakes with a cup of fruit and a two-egg broccoli and cheese omelet for a healthy, hearty start to your morning!

Ingredients:
3 medium sweet potatoes
5 tablespoons all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
2 teaspoon unsalted butter
4 tablespoons milk
2 eggs, separated
1 tablespoon vegetable oil
Preparation:
Step 1: Preheat oven to 350°F.
Step 2: Place sweet potatoes on a sheet pan and bake until fork tender. Once cool, remove potato skins and mash until smooth.
Step 3: In a large mixing bowl, sift together flour, baking powder, salt, and nutmeg.
Step 4: Melt the butter in the microwave.
Step 5: In another bowl, combine the mashed sweet potato, milk, egg yolks, and butter. Mix well.
Step 6: Blend wet mixture into the flour mixture to form a batter.
Step 7: Whip egg whites to soft peaks and fold into the batter.
Step 8: Preheat flat top griddle to medium-high and add oil.
Step 9: Drop batter mixture onto griddle and cook until golden brown, flipping with a spatula when surface begins to bubble.
